Why Our Ice Cream Tastes Different (It's the Butterfat and the Air)

People tell us our ice cream tastes different before they can say why. Richer. Denser. It doesn't disappear the second it hits your tongue.

There's a real reason, and it comes down to two numbers most people have never had explained to them.

Number one: butterfat

Butterfat is what carries flavor in ice cream. It's also what makes the texture smooth instead of icy.

The FDA sets the floor at 10% for anything sold as ice cream. Plenty of grocery store brands sit right about there, because butterfat is the expensive part. “Premium” brands climb a little higher.

Chocolate Shoppe runs 14% — the highest in the industry. That's the ice cream we serve, and it's the single biggest reason a scoop here doesn't taste like a scoop somewhere else.

Number two: air

This is the one nobody talks about, and it's arguably the bigger deal.

All ice cream has air whipped into it during freezing. The industry term is overrun, and it's measured as a percentage of added volume. At 100% overrun, half of what's in the carton is air. That's legal, common, and it's why a half gallon can feel suspiciously light when you pick it up.

Air is cheap. Cream is not. So there's a permanent temptation to sell people more air.

Chocolate Shoppe runs some of the lowest air content in the business. Denser ice cream, less air, more actual ice cream in the scoop. It's why our pints have real heft to them, and why a small here satisfies people who'd normally order a large.

What that means at the counter

Higher butterfat and lower overrun cost more to make. We're not going to pretend otherwise — you'll notice it in the price.

What you get for it is a scoop that tastes like something. Flavors come through clearer because there's fat to carry them and less air to dilute them. It's the difference between a flavor you notice and a flavor you just sort of assume is there.
